Moist cake with creamy Greek yogurt and aromatic thyme honey - a Mediterranean-inspired treat that's perfectly balanced and deliciously tender.
Instructions
In a large bowl, whisk together Greek yogurt, sugar, and eggs until smooth and well combined.
Stir in the olive oil and lemon zest until evenly incorporated.
Gently fold in the flour and baking powder until just combined - don't overmix.
Pour into a greased 23cm cake tin and bake at 170°C (340°F) for 45 minutes until golden and a skewer comes out clean.
While cake bakes, gently warm the honey with thyme sprigs in a small saucepan for 5 minutes.
Remove thyme from honey and pour the warm syrup over the warm cake, allowing it to soak in.
Let cool slightly and serve topped with chopped walnuts.
