Traditional Brazilian cornmeal cake - simple, rustic and incredibly delicious.
Instructions
Combine all ingredients in a blender and blend until smooth
Pour batter into a greased 23cm round cake tin or bundt pan
Bake at 180°C (160°C fan) for 40 minutes
Cake should be golden brown and a skewer inserted in center comes out clean
Serve warm or at room temperature
Ingredients
- cornmeal (fubá or fine polenta) 200 g
- plain flour 200 g
- caster sugar 250 g
- eggs 3
- whole milk 200 ml
- vegetable oil 100 ml
- tablespoon baking powder 1 EL
- Parmesan cheese, grated 50 g
- teaspoon fennel seeds 1 TL
