Semolina cake soaked in lemon syrup - a classic from Turkish cuisine that's moist, sweet, and absolutely delicious.
Instructions
Beat eggs with sugar until light and fluffy
Fold in yogurt, semolina, and baking powder until just combined
Pour into greased baking dish and bake at 180°C (350°F) for 35 minutes until golden
Boil sugar with water and lemon juice until slightly thickened
Cut the hot cake into diamond shapes while still in the pan
Pour hot syrup evenly over the hot cake
Sprinkle with chopped pistachios and let cool completely
