Instructions
Preheat oven to 180°C (160°C fan/350°F). Thoroughly butter and flour a 24cm bundt pan. Shape marzipan into 12 equal balls (about 12g each) and lightly dust with flour. Wash oranges in hot water, finely grate zest and squeeze juice.
Beat room temperature butter with brown sugar in a stand mixer for 5 minutes until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in orange zest.
In a separate bowl, thoroughly mix flour, baking powder, all spices and salt. Alternately fold this mixture and milk into the butter-sugar mixture, beginning and ending with the flour mixture.
Spread half the batter in the prepared pan and smooth. Distribute marzipan balls evenly over batter, keeping some distance from edges. Cover with remaining batter and smooth carefully. Bake for 50-55 minutes.
Let cake rest in pan for 10 minutes, then carefully turn out onto a wire rack. Cool completely - at least 2 hours. The cake must be completely cold before glazing.
Sift powdered sugar and mix with rum and fresh orange juice to make a smooth, thick glaze. It should drip from the spoon but not be too thin. Add more powdered sugar or liquid as needed.
Place completely cooled cake on a serving plate. Pour glaze evenly over cake, working from center outward. Let glaze set for 30 minutes before serving or store covered until ready to serve.
