Traditional Filipino rice cake with coconut - a festive Christmas treat that's soft, sweet, and deliciously aromatic.
Instructions
In a large bowl, whisk together rice flour, sugar, and baking powder until well combined.
Gradually stir in coconut milk and beaten eggs until you have a smooth batter with no lumps.
Pour batter into banana leaf-lined baking dish or greased round cake pan.
Sprinkle desiccated coconut and grated cheese on top. Add sliced salted duck egg if using.
Bake at 180°C (350°F) for 35 minutes until golden brown and a toothpick inserted in center comes out clean.
Serve warm, traditionally cut into squares or wedges.
