Instructions
Combine flour, salt, and cold butter. Gradually add ice water until dough forms. Roll and fold several times to create layers.
Roll out pastry and line a 23cm cake tin, pressing gently into corners and up sides.
Heat milk with cinnamon stick and lemon zest. Whisk egg yolks, sugar, and flour. Gradually add hot milk, then cook until thickened. Add vanilla and cool completely.
Pour cooled custard into pastry-lined tin, smoothing the surface.
Bake at 220°C (200°C fan) for 35 minutes until pastry is golden and custard is set.
Use a kitchen torch or broiler to caramelize the top until golden brown spots appear.
