Instructions
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and bicarbonate of soda.
In another bowl, whisk together eggs, buttermilk, oil, vanilla, and red food coloring until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix.
Pour into greased cake tins and bake at 180°C (160°C fan) for 35 minutes or until a skewer comes out clean.
Beat cream cheese and butter together until light and fluffy, about 3-4 minutes.
Gradually add sifted icing sugar, beating until smooth and creamy.
Once cakes are completely cool, spread frosting between layers and over the top and sides.
