Instructions
Beat the egg with sugar and apricot jam until well combined.
Stir in flour, bicarbonate of soda, and vinegar until just combined.
Fold in milk and melted butter until smooth.
Pour into a greased baking dish and bake at 180°C (350°F) for 45 minutes until golden brown.
Bring cream, sugar, butter, and hot water to a boil, stirring until smooth.
Pour the hot sauce over the hot pudding immediately after baking.
Serve warm with vanilla ice cream or custard.
