Instructions

Place dried pears, figs and raisins in a bowl and drizzle with kirsch. Mix well and let soak for at least 12 hours, preferably overnight. Stir occasionally so all fruits absorb the kirsch.

Toast hazelnuts in a dry pan over medium heat for 3-4 minutes until fragrant and lightly browned. Cool and roughly chop. Lightly toast the flaked almonds as well.

In a large bowl, carefully combine flour, baking powder, cinnamon, ground cloves, cardamom, nutmeg and salt. Whisk thoroughly to distribute spices evenly.

In a separate bowl, mix brown sugar and honey. Beat in eggs one at a time, then add oil and milk. The mixture should be smooth and homogeneous. Beat briefly with a mixer if needed.

Add the wet mixture to the dry ingredients and gently stir with a wooden spoon. Don't overmix - stir just until combined. Fold in the soaked fruits with their liquid and the toasted nuts.

Line a 30cm loaf tin with baking paper. Pour in batter and spread evenly. Bake in preheated oven at 170°C (150°C fan) for 75 minutes. Cover with foil if surface browns too quickly.

Immediately wrap the hot pear bread in foil and let cool completely. Rest for at least 24 hours to allow flavors to develop. The bread will become more moist during this time.

Sift icing sugar and mix with hazelnut butter, milk and vanilla extract to make a smooth glaze. Consistency should be thick but spreadable. Add more milk or icing sugar as needed.
