Instructions

1

Rub quinces with a cloth, peel and core them. Cut into 1cm cubes and immediately drizzle with lemon juice. Simmer in a pot with a little water for 10 minutes until tender. Drain well.

2

Preheat oven to 175°C (350°F). Grease and flour a 26cm springform pan. Cream butter and sugar for 5 minutes until light and fluffy. Beat in eggs one at a time. Mix flour, baking powder, cardamom and salt, then fold into the mixture alternately with milk.

3

Gently fold the cooled quince cubes into the batter. Pour into the prepared pan and smooth the top. Bake for 55 minutes until a skewer inserted in the center comes out clean.

4

Sift the powdered sugar. Warm honey with water until liquid. Add the warm honey to the powdered sugar and stir until smooth. Stir in chopped thyme. The glaze should be thick but pourable.

5

Let the cake cool completely before removing from the pan. Pour the honey-thyme glaze evenly over the cake and spread with a brush. Let set for 30 minutes before serving.
